Meet Palisade’s New Family-Friendly Sip Shop
Where other than Palisade can you find a coffee shop that pairs cocktails with kid-friendliness? In February, co-owners Jaime Cox and Christina Terrell opened Pressed — a coffeehouse, community hub, and every parent’s new not-so-guilty pleasure. But Pressed isn’t simply a coffee shop. It blends features you typically don’t find together, and it does so with authenticity and style. For example, the aesthetic is a mix of clean, modern lines with vintage bohemian apothecary, and the shop’s dark interior palette is balanced by natural light spilling in from its many windows.
But the best contrast is that Pressed is both adult- and kid-friendly. For adults, it provides bar and table seating inside for intimate conversations or business meetings. Outside, families can catch up with friends as children expend their energy in a safe, fully-fenced
play area.
In part, Cox and Terrell dreamed up Pressed in reaction to needs they have in their own lives. “As a mom, you go to a coffee shop and you want to enjoy your coffee, but then suddenly your little ones are running around, and you’re not enjoying it anymore,” says Cox.
“I wanted to have a spot where I can go and feel like it’s not an interruption to everyone else,” adds Terrell.
Pressed offers a full fair-trade coffee bar and tea menu, plus local wine, beer, and classic cocktails. Customers have the option to add cannabidiol (CBD) to any of their drinks. Cox grows the hemp used in all of the shop’s CBD infusions.
Fare includes a toast bar with gluten-free options, charcuterie, sandwiches, salads and fresh veggies by local farm Field to Fork, and desserts and baked goods by Sweet Kiwi. For kids, Pressed has created its own take on the classic peanut butter and jelly sandwich. After 5pm, patrons can bring in their own family picnic dinner to enjoy with a wine and dessert pairing.
From the beginning, Cox and Terrell recognized the need for a gathering spot with consistent, extended hours. Pressed is one of the only family-friendly coffee shops in the Palisade area open in the evenings. In addition, it’s one of the few places in town where you can grab breakfast on Sunday mornings.
“We hope Pressed becomes a true establishment in the community,” says Cox. “We want people to feel welcome and relaxed — to leave better than when they first came in.” :

Made from hemp, CBD (cannabidiol) is known for its anti-inflammatory, pain relieving, and healing benefits. It does not contain any of the psychoactive properties of THC, the chemical found in hemp’s sister plant, marijuana.
